Dimitris Stavroudis and Chef Vassilis Vergos, both of northern Greece, have created a five-star culinary oasis in Firostefani. The three-tiered bistro has a lovely terrace-top bar in high season: the more protected courtyard/bar and cozy interior are perfect in spring and autumn. Homemade pastas here are excellent, and all the specialties feature excellent local produce, beautifully presented.

Beaching it!
Swim at Red Beach, Dinner in Oia at 1800: After breakfast at your hotel, or in Fira, at Diverso or Batis (cafés on the main square), proceed to Red Beach, by caïque from near Akrotiri’s Fish Tavern Stolidas; in the evening, have dinner in Oia at 1800!
